Vegetable Soup Meatloaf

This is a great way to stretch a can of soup some ground beef and leftover bread. It cooks in one pan and includes healthy veggies and protein.

  • 1 can vegetable or tomato soup
  • 1 – 1.5 pounds of ground beef
  • 1 cup of mixed vegetables or leftover vegetables
  • 1-2 slices of bread (stale bread works well!)
  • 1/2 onion, chopped
  • 1 stalk celery, chopped
  • 1 egg (optional)
  • Ketchup (optional)
  • Salt and pepper
